Chinese White Tea
A Little Extra – Moonlight White / It’s no accident that our white tea is called Moonlight White. In order not to damage the leaves with excessive withering, the tea leaves are spread out on bamboo mats at night under the moonlight to ensure a gentle withering process that retains the leaf structure and flavours, as well as micronutrients and health benefits. It’s because of this gentle and slower drying process that the leaves remain bioactive, and can be aged to improve flavour and health promoting effects.
White tea expresses primarily soft floral flavours, and the most common varietal is named after the peony - China's national flower. The minimal processing allows it to be aged, and a popular saying refers to its medicinal properties after three years.
